[Help] Tips on building a dedicated server?

Okay, well to start off I have played, and had MU servers, for years. But about two years ago, I stopped even looking into server files or any types of releases. I just played a little GMO here and there. Well, I'm wanting to get back into it, hosting a small server, honestly I just do it as a hobby. What sparked this was the fact that me and a friend had most parts we needed to build a spare computer, and the fact that I just have been wanting to get back into it. So, since I'm a little old and rusty on the subject, I wanted to get a few opinions on it. Keep in mind, it will be a small server, we're not looking to spend a lot of money, and we are going to keep what parts we have for now, but I'm open to suggestions on future upgrades.

Processor: AMD Athlon 64 X2 5600+.- Newegg.com - AMD Athlon 64 X2 5600+ Windsor 2.8GHz Socket AM2 89W Dual-Core Processor ADA5600CZBOX (Already have)

Memory: ADATA 2GB (2 x 1GB) 240-Pin DDR2 SDRAM DDR2 667.-http://www.newegg.com/Product/Product.aspx?Item=N82E16820211061 (Already have. Probably will be the first upgrade, for more memory. But for now, we've had this overclocked at 800mhz, very stable)

Motherboard: Can't remember the name, just a decent AM2 board we've had. Haha

Chassis:DIYPC DIY-5823BK Black SECC ATX Mid Tower.- Newegg.com - DIYPC DIY-5823BK Black SECC ATX Mid Tower Computer Case with 1 x 80mm Fan
(Ordered. Cheap, lightweight, and I've got a spare 80mm for the side.)

PSU: RAIDMAX RX-380K 380W.- Newegg.com - RAIDMAX RX-380K 380W ATX12V Power Supply
(Ordered. Once again, cheap, and I've had good luck with a Raidmax PSU before. I know, they say don't go cheap with a PSU, I'm just hoping it doesn't 'splode.)

HDD: Well, here there's a few options. I have an 80GB IDE drive that is just sitting in my closet, or I've found a pretty good seller on eBay where I can get a "Seagate Barracuda SATA II 80GB 7.2k" drive for about $20. Obviously SataII would be faster, and if I got this I could possibly use the IDE drive for backups. I've also considered a 32GB SSD (Newegg.com - SanDisk ReadyCache SDSSDRC-032G-G26 2.5" 32GB SATA III Internal Solid State Drive (SSD) for Windows 7-based PCs), but #1 I don't know if 32GB will be enough, but I think it should, especially if I have the IDE in as a secondary drive. and #2 I just don't know if I want to pay for an SSD. Do you think it'd be worth it? On one hand, there is no telling how much life there is on the IDE or SataII drive, but on the other.. I could save $20-40.

As far as the OS goes, I haven't decided yet. Me and my friend haven't decided on server files yet, either. What is your opinion on the OS? I was thinking either stripped down XP, or Windows server 2003, or 2008.
Also, suggestions on files are welcome.
